1/4 cup olive oil 1/4 cup water 3 tbsp balsamic vinegar 2 tbsp fresh chives, finely chopped 1 tbsp fresh oregano, chopped 1 tbsp fresh thyme, chopped salt, to taste fresh ground pepper, to taste 1 small red onion, cut in wedges & separated 1 med zucchini, cut in 1/2" diagonal slices 1 yellow pepper, cut in chunks

Instructions |

Mix together first 6 ingredients in a small bowl and whisk well. Place cut-up vegetables in a glass baking pan and pour marinade over top. Sprinkle with salt and pepper to taste. Toss to coat and let vegetables sit for approximately 15-30 minutes, stirring occasionally.
Using a slotted spoon or tongs, place vegetables on a grill pan and place on grill over medium heat. Brush occasionally with extra marinade. Turn vegetables every few minutes until they are golden brown on edges and desired doneness, about 10-15 minutes. Serve immediately.
