  BBQ Pulled Pork Sandwiches





  Yummy Zucchini Cornbread Casserole

  Ingredients
  1 large zucchini, grated
1 small onion chopped (I used white)
2 eggs
1 8.5 oz box of cornbread mix
salt
pepper
1/4 cup grated cheddar cheese
   
  Instructions
  Just put the zucchini, onion, eggs, cheese, cornbread mix, salt and pepper in a mixing bowl and mix.

Pour mixture into a prepared casserole dish and add another 1/4 cup or so grated cheese on top.

Bake at 350 for one hour. Enjoy!
